Mojito Lime Cake

mojito lime cake


  • 2 sticks of unsalted butter
  • 2 cups of granulated sugar
  • 4 eggs
  • 1 cup of buttermilk
  • 1 tbsp. rum
  • 1 tbsp. vanilla extract
  • zest of 1 to 3 limes
  • 3 cups of self rising flour
  • 2 tbsp. chopped mint

Mojito simple syrup

  • 4 oz. brown sugar
  • 4 oz. granulated sugar
  • 4 -6 oz. water
  • 1 oz. rum
  • 1 oz. of lime juice
  • 1-2 tbsp. mint


  1. In a stand mixer with paddle attachment cream the butter and sugar until creamy and fluffy.
  2. Alternate wet and dry ingredients until evenly incorporated.
  3. Add mixture into buttered pan and bake at 350°F.
  4. Leave in oven until toothpicks comes out clean in center.

Mojito simple syrup

  1. Combine sugars and water in sauce pan until sugar is dissolved.
  2. Incorporate lime juice, mint and rum to your taste.
  3. With a toothpick incorporate holes in lime cake and with a pastry brush soak cake with simple syrup.
  4. Decorate with sugar merengue, lime zest and lemon slice.
